I am still thinking about the Jewish food class. When I was a culinary student, we had 1 tiny part of a banquet course that focused on Jewish (Kosher) food, mainly dealing with catering and the laws followed by orthodox families and how we could screw things up if we didn't know what NOT to do lol. The other part was during our meat butchery class and focused on animal slaughter. I went to culinary school in NY, so most of the natives already knew a lot of it, but being a farm girl, it was all new to me and very exciting. I ended up marrying a Jewish man, but we don't observe any of the food rituals.
Though she's not exactly practicing, my wife is Jewish. I wouldn't necessarily choose to take equivalent courses to these TCC options if I was going a more traditional B&M route, but they seem like they could be pretty interesting, especially the food one you're looking at. If I end up taking it and get to it before you decide on it, I'll certainly give you my feedback.
