IMO, I think Life Span Developmental Psych was one of the most "fun" exams. 
Social Psych was also quite easy, especially if you've taken Intro to Psych. Psy of Adulthood and Aging was somewhat boring to me... but still quite doable. I haven't taken Abnormal Psych or Research Methods in Psych, but yes, like the others say, it might be good to take Stats before RMP.
If you're thinking of just 2 UL ECEs, I'd suggest taking Social Psych and either PAA or Abnormal Psych.
