You will have a GPA, it will come from your premed sequence at the CC. Are you starting with intros or right to the general sciences? I ask, because intros add layers to what will "count" and add time. The CC usually requires various things in order to go directly into generals, so you should check. Also, have you considered NOT doing the CC route and taking a full post-bac program? Do you know what those are? If I were in your shoes, that would be my plan, and it would be through a 4 year school not a 2 year. There is bias, but I think a strong MCAT and letters from science teachers can overcome it.
Finally- heck yes apply! If you don't apply, it's 100% that you won't get accepted. If you do? Well, there are charts floating around, you should google it. You cross your GPA against your MCAT score and it shows the predicted possibility of acceptance. If you want to be a doctor, apply to med school. If you think PAs answer to doctors (They do) and you won't be happy with that- you need to go all in. You don't want a life of resentment toward your profession. JMO
Finally, consider applying to DO schools over MD schools. They are more accepting of non-trads. Lastly, you need a good story- a spin, on why you tested out of your degree, and be ready with hard solid answers because they WILL ask, and you'll either come off looking like a slacker or a rock star.
