Let me assure you that we all go through the learning process of understanding the college system and policies. When we transfer to the Big 3, there are a lot of new things to learn, too.
A good place to start is by downloading the Student Guide to Credit by Exam. https://www.excelsior.edu/469
Use the CLEP/DSST section as a guide to figure out which categories your credits will fulfill. If you post your results here, we can look it over for you. (Is that the number of credits that you earned at the college or is that the number that the foreign credit evaluation recommended?)
Any time the degree chart says "Arts & Sciences", it means anything within Humanities, Social Science, History, Math, or Natural Science. "Applied Professional" is a free electives section that does not have to be in the previous categories; it includes many other subjects like computing, business, or health.
The Liberal Arts degrees are extremely flexible. Are you interested in something more specific like business or computing?
