I have taken six classes at Colorado State University Pueblo for my degree at COSC and just transferred them back. They are a lot cheaper for me than the classes as COSC would have been, plus there is a great selection. Might be worth looking into them or maybe BYU to fulfill your requiremements. I have found the classes to be acceptably rigorous while still remaining very doable.
