For speed and cost, your best bet is likely UMPI, where up to 90 transfer credits can apply to the degree and you need to do a minimum of 30 credits at UMPI. At a glance, it seems like you are missing English II, a science lab and a foreign language, which can fulfilled with Workplace Writing II on Sophia, Human Biology Lab and Spanish I on Sophia, respectively.

Welcome to the board, great initial post with some info, but you're missing the budget, commitments, study habits and so on asked for in the addendum and template here: https://www.degreeforum.net/mybb/Thread-New-to-DegreeForum-How-this-Area-works At the time being, I also think the UMPI option may be your best bet for cost, ease, speed to finish. If you just need a check the box, then the BLS with any minor of your choice would work, such as PM, MIS, or Management...

Is Excelsior a good choice too? I was looking into them as well; are there any pros or cons to either one?

UMPI BLS in 2 sessions, MAOL in 2 sessions or MBA in 1 year. My answer to this question is similar to the copy/pasted post reply from here: https://www.degreeforum.net/mybb/Thread-Help-Needed-Deciding-Between-Two-Schools-with-Similar-Credit-Transfers?pid=432118#pid432118

With sufficient energy, time, and how you manage your studies, you can probably complete the BAS in 1 session, and the MAOL in 1 session if you're extremely dedicated and have absolutely no commitments. That would equate to $1700 for BAS, $2300 for the MAOL, total $4K for a Bachelors/Masters combo. Having said that, since you're still in your 30's and a lifelong learner, you may want to complete the HAU MBA afterwards in 1 year, for $3K if they have that scholarship pricing available after you're done with the MAOL.. I mean, $7K for 3 RA degrees is an amazing deal...
