UFM Universidad Francisco Marroquin is a well-established brick-and-mortar private university in Guatemala, a country about the size and population of Florida, Central America. It now offers full online and by-thesis programs in English as well.
It was founded by Libertarian fans some decades ago to provide a strong polytechnic/economics school with readings in Libertarian-based or -interest authors in every field. It then expanded into other areas.
They also wanted to provide a UNISA-type model for bringing low-cost/free degrees to people of modest means across Latin America and in due course the world.
It is fully accredited.

I should point out that in a typical 3-year program that that is about USD $4667 a year or (after down payment) USD ~ $350 a month.
