Does anybody know if I can register for a Sophia class, set the start date for after July 31st, and still have the course be free? For example, if I have a handful of courses left to take before the deadline, could I register all of them, set the start date for August 31st, and still get the course credit for free?

Yes as long as you "purchase" tge course by July 31st you fine. Heck you could start 6 months after July 31st (if they let you start that far off) and it would still be free. It has nothing to do with completion date.
