Thinking about my son taking a class at Davar to fulfill requirements. With constant changes on what the Big 3 accept - I'm feeling skittish about getting credit from anywhere not specifically partnered with a college. It says on the Davar website that Charter Oak accepts Davar, but what about next month?

Any reason to doubt Davar?

Go for it. Nobody knows what next months changes might be. Ask COSC if you have to.

For COSC it would be a no: https://www.degreeforum.net/mybb/Thread-COSC-no-longer-accepts-Coopersmith-and-others
For other institutions like EC or TESU: It should still be possible as it's on the TESU provisionally approved list.
I would be on the safe end and email the school you're interested in and make sure before taking the courses.

Davar Academy is the new name for Tor Academy, someone corrected me on that...

I think they are two totally different companies, but if someone could enlighten us...
Tor is Israel based, Davar Arizona based, ??

Tor Academy renamed themselves as Davar, but they have two separate entries in NCCRS database. Because COSC only specifies the old entity, I would get direct clarification from them.

Tor/Coopersmith is NOT Davar. I think Davar has an agreement with COSC, which is why you see the course equivalencies listed.

Coopersmith is not Davar/Tor. Davar definitely WAS Tor. I still have the email from when they announced their name change. Tor is defunct.
