I did Shmoop's Bible as Lit course. Someone said it came into TESU as "Lit 242 Biblical Lit 1". Would this cross off one of my Knowledge of Human Cultures requirements? It could not cross off anything else, right?

Yes, it will come in as KHC - and no, it won't fulfill any other requirements.
Now, if you are getting something other than a BSBA (only reason someone would take the SM TECEP that I can see?), it could count in the AOS, depending on what you're getting.
