Could someone with experience please tell me a little more about NMJC and how their science courses work? It looks like a good option.

My wife starts her first course with them this month. So far I can tell you that the office is pretty good, they can seem slow at times but stuff gets done.

There is a difference in the requirements even from A&P to A&P couses. One Instructor (Farrow) allows and older copy of the book and to this point has not required the personal purchase of any lab specimens (no mention in the syllabus). The other person that teaches A&P requires the newest iteration of the text (and lab book). The other instructor also requires the purchase of a sheep's eye and some sort of kit for dissection (cool really, but adds cost).

I think the whole claqss, 4 credits, came to $369. I sprung for another $25 to cut the payments into three pieces.

I like how they have their hard science courses compressed, so I can take Biology 1 and 2 in the same semester, and A&P the next semester. I'm going to contact them and see if they will waive the pre-requisites for the A&P course, and then I could get it all done by Christmas.
