I'd make a degree plan - "knocking out" courses is certainly not the best way to go - you need a plan. If you take a bunch of courses that aren't accepted there, or won't work in your degree plan, you've wasted time and money.
The good thing is that you're starting from zero credits, so you almost can't go wrong. But you do need to make sure EU will take the courses you want to bring in (looks like they've pared down what they will accept, including English Comp I & II - I don't think those meet the writing requirement any longer, although I'm not 100% on that).

I had a plan. I don't think I'm starting from scratch. I have finished some Sophia courses and I'm averaging one every 3 or 4 days.

I mean you started with zero credits prior to Sophia - nothing from a college.
I'd just continue with Sophia courses if you like them. Just make sure they're on the list of transfers - and don't take any more math unless it's Calc (you're limited to 3 math courses below calculus).
Make sure to get anything that checks the boxes - more humanities courses, an Ethics course, any possible UL (Prin of Management for sure, and one of the UL CompSci courses if you want). You'll have to switch to Study or Coopersmith for your UL A&S courses once you hit 90cr of LL.

LawShelf isn't very good for a BALS. There are a limited number of UL professional credits that you're allowed to bring in.

I'd suggest continuing with all the Sophia.org you can handle, get to the 90+ credits or so. You can decide on the upper level courses by looking through some providers, if you want NCCRS such as Coopersmith, Davar Academy, LawShelf, etc or ACE options such as Study.com - I usually recommend the ACE Sophia/Study.com combo to get the degree of choice.

Davar and LawShelf are not good options for UL A&S courses at EU - EU accepts very few (if any) of their courses for this area. Instead, stick with the tried-and-true options: Study.com and/or Coopersmith. We know with certainty which courses EU brings into A&S from those 2 providers.

I'm sorry everyone. Forgive me, but I'm not familiar with a lot of this stuff and the various terms, so I am super confused right now.
Can I take any Sophia classes that Excelsior will give credit for or do I need specific ones?
Someone said that Excelsior is no longer accepting comp 1 and 2 from Sophia is that true?
By my calculation, if I took every Sophia class I can that's on Excelsior's list excluding calc and programming, that would give me 92 credits so I'd just have to get the other 21 from somewhere.
I just want to make sure, I'm not wasting time taking things I don't need to or that won't be counted.

EU considers Conflict Resolution & The Essentials of Managing Conflict duplicates - so subtract the 1cr one off your list.
Intro to Stats will be a 4th course under Calc level, so count that one out.
Also, some are probably more trouble than they're worth - anything with multiple assignments (touchstones) may not be worth doing, because they are taking a really long time to grade assignments:
Business Communication - 4 assignments
English Composition I - 5 assignments
English Composition II - 7 assignments
Public Speaking - 4 assignments
Spanish I - 5 assignments
There are others with 1 or 2 assignments, which is still more than you need to do for most LL work, so you might want to consider that as you go along. But those probably won't kill you like the others might.
