Many people pay taxes for government services, and often, government officials are not helpful when they call them. We talk about "When is it okay to record or to not record them?"

As long as it's legal, record them all you want. Save you from having to remember or write notes during phone calls.
I would record police if they try to use a dog to get a search of my car as they have been known to false alert. Police may harass you if you fit a certain profile, have a criminal history that includes tickets for moving violations, or if you are from out of state.

this pertains to phone calls:
In other states, however, there are two-party consent laws. The name of the law is a bit misleading, however. Under two-party consent laws, every party must consent to the recording, even if there are more than two. This prevents you from recording someone without their knowledge. It's important to note that recording police officers or other public officials may have different laws based on the state in which you are recording.
As of March 2022, there are 11 states with two-party consent laws in place. Please check with your state's specific laws, as there may be some provisions. These states are:
California
Delaware
Florida
Illinois
Maryland
Massachusetts
Montana
Nevada
New Hampshire
Pennsylvania
Washington

I hate that my state requires two-party consent.
