More and more schools are offering social work and engineering degrees online. Social work is a good option since most states will license at the baccalaureate level if the program is accredited by CSWE. A master's degree is better for employment purposes, but a BSW will give you advanced standing in an MSW program. A bachelor's in engineering, especially one accredited by ABET, will make it easier to become licensed as a professional engineer. The Big 3 could offer an education program that is similar to WGU's where you do student teaching for a traditional certification path.
For "other," I'd like to see physical therapy assistant (TESU offers occupational therapy assistant, polysomnography, and dietetics in partnership with Rutgers) and applied behavior analysis could lead to a certification as a behavior analyst or behavior analyst assistant. I also think animal science would be interesting, but it might be better to offer a licensed occupation such as veterinary technology. Penn Foster has been able to offer allied health programs by distance that have programmatic accreditation. Animal science, kinesiology/exercise science, occupational safety and health, athletic training (a licensed profession), wildlife management, forensic science, and communication sciences and disorders (could lead to a speech pathology assistant license) would also be cool.
