I'm just starting to learn more about taking DSSTs.
Which one would you recommend I take first to get my feet wet?

Depends on your background and experience. Go with your strengths. What could be easy to one person may be difficult for others.

I am not sure what your situation is, but you probably need lots of social science and science classes for your core requirements.
Do yourself a favor, and start out with an easier one. You may need to develop your DIY learning skills, and test taking skills, so try to over-study a bit on the first one so you knock it dead.
After to take a bunch you will feel like you are at the voting booth. You will be clicking on some questions as fast as they show up.
Some easier ones are:
Race to save the planet
Here's to your health
Even though these are claimed to be easy, nothing is when you first start. Make sure you check out the Exam specific forum for the tips.

Which ever one that you have knowledge in.

2 Different Bachelor Degrees completed in under 2 years!

Intro to World Religions
Technical Writing
Principles of Supervision
Intro to Business
Human Resource Management
Organizational Behavior
Of that list, I'd probably pick Intro To Business to start off with.

The full title is DSST:Environment and Humanity: Race to Save the Planet
If you are environmentally aware you will find it easy. Be sure to read the exam specific thread.
EC - BSLS Finally done!
Went from 86 to 120 credits in six weeks thanks to IC and the forum.
Currently doing MBA pre-reqs.
Now BSLS + 9 credits
