Are the courses similar to Sophia in terms of layout and assessments?

The format of the courses are very similar. Everything you need for the course is self contained in the course. The assessments are different. There's only the Final Assessment. They vary for each class. They also change with different professors.

I agree with ss20ts. It's the closest you're going to get to Sophia for online schools. There haven't been any proctors for my classes yet, but they pretty much are similar to Public Speaking, or Business Law where your final is an assessment via a project (like a powerpoint with 15 slides and voice over) or an essay that's usually around 5 pages. Only 1 class I had had a 15 page essay, nearly there est of my classes (5 so far) had 5 page essays
