So I've been studying the Social Sciences/History CLEP book...and just recently subscribed to IC. The flash cards have been an awesome help.
But my question is...
is it easier to take the Social Sciences/History (I'm assuming it's one clep right?) CLEP or to take individual CLEPS?
Such as Sociology separately?
I'm having a terrible time studying for the economics section for this Clep because each thing I study goes in depth and I just need an overview....
so should I try another Clep that studies one thing at a time?
Or is this the easiest Clep to do and I'm just not smart enough? :p

I don't know, but I can tell you that schools vary widely about how they count credit towards the Social Sciences and History test. They might not count it at all, might count it only for elective credit, might count it towards a Social Science major, but very unlikely to count toward either a History, Psychology or Sociology major.
Sociology is a very, very (very, very, very) easy exam, although very interesting to study for.

Study the IC Sociology cards, chech the Specific Exam Forum for suggestions and other subjects to do Google/Wiki searches on.
Study the cards and anything else they mention. Attack one test subject at a time. If you have a general book, only review the one subject at a time.
Once you have successfully finished one test, you will have a bit of a high that will energize you to look for the next one.
If the forum suggests you study certain subjects in a certain sequence, pay attention. You can save a lot of time, hard work, etc., by paying attention to those who have gone before.

I don't think it is just your imagination that it can be difficult to study 10 subjects in order to prepare for 1 general CLEP exam.
If you only need this one exam or are trying to get an overview of all these subjects so you can decide on taking some of the specific CLEPs, then try to keep going. The general exams are supposed to be very broad but not very deep.
My experience with the Natural Science (general) CLEP was that it was much easier to study for after taking some of the specific science CLEPs, Biology in particular. If I had to study for the Natural Science CLEP first, I think it would have been much harder.
