Does anyone have know about or have experience using the TAMU extension online nutrition courses as part of a degree? Will TESC accept them as college credit even though they are continuing education credits. I know they will accept the FEMA courses which are originally for continuing education credits. Would these courses be similarly accepted?

TESC (and other colleges) look down on extension courses usually. Unless TESC can see a transcript of graded courses you're not likely to get credit. FEMA courses are as you mentioned one of the exceptions to this rule. Along with those you can check out TESC's list of other credit worthy content:
Thomas Edison State College: Licenses & Certifications
My completed "non-traditional" credits include 27 credits from CLEP, 30 credits from DSST, 6 credits from ALEKS, 19 credits from FEMA courses including PDS, 3 credits from NFA courses, 10 credits from ACE Workplace Training, 3 credits from a TESC TECEP exam, and 3 credits from a TESC PLA course.
