Are most course for Study.com multiple choice quizzes or essays or both?
I am looking for an English 2 or Communications class.

All study.com courses have multiple choice quizzes and a proctored multiple choice final exam. The English composition courses usually have a few writing assignments. Some other courses, especially the upper level ones, also have additional assignments which are often writing assignments.
I took English composition 2 through SDC and it is very doable. It had one research proposal and 2 essays. If you don't do as well on the writing assignments, you can make improvements and resubmit for a (hopefully)higher grade.
I haven't taken their communication course but I hear communications 120: presentations in the workplace is one of the easier(if not the easiest) class on SDC. 32 lessons and a final.

Question: For Study.com courses that have assignments, can you do them after the Final Exam or do you have to do them before the final exam? There are a few courses I want to do every quiz first, do the final second, and the assignments/projects last.

I'm pretty sure you need to submit the assignment before you can take the test, however you do not need to wait for the grade to be returned. I've submitted my assignments and then taken the final on the same day

Yes you can submit the assignments after the final. That's what I did. Just as long as your college accelerator subscription is still active.
In fact, I believe I submitted the 3 assignments for one of my classes over a month after I took the final.

You could do the DSST for public speaking if it fits your plan.
It was easy, slightly cheaper than Study.com, and only took about an hour to complete versus 100+ quizzes and final.
