I've considered it, but here's the lowdown from my perspective: Excelsior gives you two GPAs, one for Excelsior classes, and one for overall GPA. I've heard that some employers or graduate schools get confused about which GPA to look at, and therefore it's good to have a high GPA on both. I am taking ONE Excelsior course simply to have an Excelsior GPA. I called advising and was told that UExcel would count as an EC course, and therefore if you get a bad grade, you are stuck with it. Normally I wouldn't be worried about tanking a test, but most of the UExcel stuff is in beta... I called them and couldn't really get any straight answers about percentages for letter grades, etc. etc. Bottom line is, my single Excelsior exam needs to get me a 4.0 GPA, and I'm sticking with one that has lots of specific exam feedback here, and one which I'm not taking without any accounts from other students.
