Hello again,
I took the DSST Environment and Humanities practice test (just the first one so far), and I got 35 out of 50 questions correct, or 70%. Is that enough?
Also, where could I find information for all the percentages that are in these tests?

It may be enough, that exam is scored the old way (the same way CLEP is, where they don't have a published percentage to pass). Some DSST exams do, see page two of this link:

I'd make sure you're covering the study guide areas of that exam and give it a go after a little more study.

My completed "non-traditional" credits include 27 credits from CLEP, 30 credits from DSST, 6 credits from ALEKS, 19 credits from FEMA courses including PDS, 3 credits from NFA courses, 10 credits from ACE Workplace Training, 3 credits from a TESC TECEP exam, and 3 credits from a TESC PLA course.

Usually 60% correct is good, so it sounds like you will do well. If you have an InstantCert subscription, there is an AMAZING document for this exam that you should definitely look over in the "Specific Feedback" section. It is Snyderm's guide (post #55 in the thread -- also linked in my thoughts for this exam, which is in my signature). If you go over this document alone, you should be able to pass.
