So I was thinking about getting a BA in Mathematics from TESU and wanted to transfer in most of the math credits from other schools, like my local CC and AMU. I noticed for this degree TESU requires 18 to be UL and am trying to figure out if I transfer AMU classes like Calc III (MATH227 at AMU) would TESU mark it a 300 level course like they consider their own Calc III (MAT-331)? Same with Linear Algebra, with AMU considering it MATH220 and TESU MAT-321.

They will generally consider it as upper level if it comes from a 4-year college or university, but not a community college. So it should be all right to take them from AMU, but not from your local cc.
The cc would be a good option for the lower level courses though.
BA, MA, EdS, MMT, etc.

It's pretty hard to find a LL course that counts towards the elective section of the math major other than discrete math. You have to take 5 courses in the math elective section no matter what. So you can take either linear algebra or calc 3 (but not both) as well as discrete math at the community college to save money. Take the other 4 elective math as UL and either linear algebra/calc 3 at AMU.

Normally TESU brings in courses at the same equivalency as their own courses. So, yes, you should get UL for those two courses.

I agree, I think these two will both come in as Upper Level credit.
You might just want to send an email to TESU to verify that's correct.
