Free Clep Prep.com has a pretty good guideline to answer your question. Use the pull down screens under "difficulty".

I'm always happy to complete the free application waiver for those applying to WGU (I get a free gift from WGU for this). Just PM me your first/last name and a valid email so I can complete their form.

Well, I would say that you have two relatively distinct areas.
These sort of "go together" to a point, studying for one will reveal overlap with the next so it makes sense to at least lump them together and bang them out one after the other. I would start with Psych then Sociology....then the rest.
intro to sociology
intro to psychology
Social sciences and history
fundamentals of counseling
These are business/technical, neither should require a great deal of study from an adult learner, PofMngt is known as a particularly easy exam.
intro to computers
principles of management
I don't know much about Humanities, no firsthand account at all.

Looking at the courses you have taken, I surmise that you are competant and able to do any or all of the clep exams. I have taken Introductory Psychology, Introductory Sociology and Human Growth and Development. I had previously read on the topics, so I had an edge. The flash cards are a definate help. As I did the cards I had a text book handy and often read a page or two. I also did quite a bit of internet research, which I am not sure was best use of my time. I can get tangetical at times, so often I found myself reading studies or a biography of a famous Psychiatrist. Best method was cards with a text book handy. I did the same for the on all three, esentially in the same form.
