Employment is a slam dunk if you have your RD. You can get your BS at any university and you do a clinical component too. There are quite a few options. I don't want to make negative generalizations about people who are nutritionists, but you can say you are a nutritionist right now. There isn't anything you need to do. Furthermore, the certificate you are buying isn't really buying you a credential. Proceed with caution.

If you are interested in analyzing the chemical contents of foods, I know that Kansas State offers several undergraduate degrees in the nutrition field:
