Nutritionist (a non licensed professional) isn't something you earn a degree for. You might find a certificate program through a private career school like Penn Foster or similar. You can get these certs online. The employment options for nutritionist will be mainly through self-employment opportunities you set up for yourself. Legitimate jobs might be working in a health food store, vitamin sales, in an alternative/wellness offices, Curves or Weight Watchers, etc. An RD, on the other hand, can get a nice paying job in a hospital, clinic, doctor's office, obesity camp, social service agency, grocery store, assisted living, school, college, national restaurant franchise, county health department, state or national public health programs, etc etc etc.

Since you have not really said much other than you have interest, if you were my friend or family member, I'd encourage you to consider a career in dietetics (BS degree) over nutrition certificate. Employment is a slam dunk if you have your RD. You can get your BS at any university and you do a clinical component too. There are quite a few options.

I don't want to make negative generalizations about people who are nutritionists, but you can say you are a nutritionist right now. There isn't anything you need to do. Furthermore, the certificate you are buying isn't really buying you a credential. Proceed with caution.

If you are interested in analyzing the chemical contents of foods, I know that Kansas State offers several undergraduate degrees in the nutrition field:

Department of Human Nutrition

They also have many of their nutrition courses available through online learning:
