Admittedly not the most patient person in the world. TESC and COSC received my last transcripts on December 24 and of course with the holidays I might not see anything at all until the end of January. In the meantime I'm just twiddling my fingers trying to figure out what I can do to feel like I'm making progress.
So a few questions...
I'm looking on the course offerings and it doesn't look like COSC offers constitutional law this spring and they didn't offer it last fall either. They say the paralegal studies concentration is something you can complete entirely at their school so not sure why they don't offer it either term???? It shows as a co-requisite on the degree requirements page so I don't get it. Charter Oak State College - Paralegal Studies
Also...it looks like I will need a Technology in Law. This is a long shot but is there a test out there for this? The course they offer at my local community college is only 2 credits and I need 3. My other option is to do a lifelong learning credit portfolio but you have to take a class that teaches you how to do that before you can even do the portfolio so it seems like it makes more sense to just take the technology in law class.
Other than the cornerstone and the capstone...I think these are the only two classes I need to complete my BS w/ Paralegal Studies concentration. There is a Global Understanding requirement but I think my farsi courses may cover that or I might have to take a DSST for that - no biggie.
At any rate I'm driving myself crazy waiting for a response that I know is not likely to happen any time soon with the holidays. I MUST find something to keep my mind occupied.
I assume it's a bad idea to enroll until I get the evaluation back from both schools and make a final decision so in the interim...I'm trying to work out required courses in my head.
Is there anyone else in limbo waiting for their credit evaluation?

I have been going stir crazy for the last couple of weeks waiting for the spring semester to begin. I have to take full length courses this semester so it is going to be a long haul.
Hopefully, you don't spend your spare time like I do changing your degree plans. My wife is getting sick of hearing about my latest hair-brained scheme to get into a Master's program in Canada.

Constitutional Law is being offered in the spring. It's not listed as a Paralegal Studies course. It's listed as a Political Science course. POL 321 is the course code.
As far as Global Understanding, your Persian Farsi courses will most likely cover your "N" requirement (non US-History/Culture) but not the Global Understanding course. Global Understanding can be met with DSST Intro to World Religions, DSST Human/Cultural Geography, ECE World Populations, etc. I satisfied this requirement with WGU's Global Business course.

Lol if only I was that useful
But I would recommend preparing for one of the tests I mentioned in my above (edited) post. That would give you something to do while you wait, as well as help you meet your Global Understanding requirement.

Yes, you can take the Cornerstone and Capstone with other courses at the same time. While taking my Cornerstone, I took Cultural Diversity in Public Safety Administration. While taking my Capstone, I took both Group Dynamics in Public Safety Administration, and Human Resources in Public Safety Administration.
If financial aid is no issue, you could take everything except your capstone next term, and then take the capstone during the summer term. Then you could graduate on the August 31 conferral date.

These are the classes I think I'll need. The ones with the * are maybe depending on how they process the evaluation of my credentials.
Classes that are definitely needed:
Cornerstone 1/13 and 3/17
Technology in Law 3/17
*Constitutional Law 3/17
*Civil Procedure 1/13
General Ed. Global Understanding Requirement - DSST (World Religions) (All other Gen. Ed. Requirements have been met.)
Capstone 3/17
It's feasible then that I could take these classes and make the conferral deadline of May 31 (application deadline February 28, 2014):
Cornerstone, Civil Procedure, DSST in World Religions from 1/13 - 3/9 (Two classes/One test)
Technology in Law, Constitutional Law, and Capstone from 3/17-5/11 (Three classes)
Or, do you think the Capstone should be taken by itself?

LOL! Your wife sounds a lot like my husband! He's like, "just get it done!" I think he misses when I used to make him dinner every night. For the last 10 months there have been a lot of pot pie and Tortelli dinners ;D
We should do something nice for the spouses...maybe February for Valentines Day...hmmm!
