What exactly IS a general education capstone? I understand a capstone for a major area of study, but I'm pretty unclear on what a capstone for a such a broad block of courses would involve (and the course descriptions on the various school websites are rather vague).

Not all schools require capstones for an AA/AS. For instance, TESU does not for most of their AA's, but does require one for an AA/AS in Electrical Technology or Human Services or IT - so very particular degrees where you DO have to take courses in an AOS. COSC doesn't require one that I've seen. EC requires one for all AA/AS's I think.

If you're talking about TESU, it's a general education CORNERstone and an Area of Study CAPstone. And that cornerstone can be waived with study.com affiliation.
TESU BA June 2018.

I just looked at the Ashford BA Complimentary and Alternative Health degree, I only see their HCS capstone and don't see a mention of a general ed capstone. What's the general education capstone you're referring to?
