I read the GRE Subject Test sticky, but I could not find the answer. I know you can use GRE Physics to complete the major requirement at Excelsior and COSC, but how would it look on the transcript? Does it say GRE exam credit, or does the transcript have actual course equivalents listed?

Excelsior doesn't grant credit anymore for any subject GRE exam unless you took it prior to their cutoff date. In the case of COSC, you would only get 24 credits if you make the 40th percentile or higher, which suggests you would need additional physics courses, including labs. Check the COSC requirements for the physics concentration carefully, especially if you are planning on going to grad school (in which case you will need labs).
EDIT: in the case of Excelsior, you may have already have had to have been an enrolled student prior to a certain date to be eligible to even use the GRE option. You might already know that COSC also has cornerstone and capstone courses.
