I'm just feeling a little lost, like the credit requirements seem a bit vague to me, but that's probably just from me not knowing what I'm doing, so any tips/advice would be great!
Unfortunately starting from scratch, so I just got started yesterday on Shmoop, so I knocked out Pop Culture Literacy and I'm almost done with Drugs in Literature (which are both fairly easy and interesting if anyone wants to try them!) and plan to knock out some other literature and history stuff (and maybe algebra).

Are you working towards a degree at Excelsior or TESU? Have you checked with them to see if they accept Shmoop? I haven't checked COSC or Excelsior, just wondering if you or someone has done so... I recall that Excelsior, for the most part, will accept ACE credits the way they are recommended, but some courses are not always UL even when ACE recommends it that way. I know WGU doesn't accept Shmoop credits as they're not proctored (I still wonder why they accepted ALEKS!)

I didn't see Humanities as an option from TESU, does it have a better rep than EC?

I just completed a BALSHUM at Tesu. It is a Liberal Studies degree with a concentration in Humanities and is probably one of the simplest to complete because you just need five Shmoop literature courses for the upper level credits.

TESU counts some of the Shmoop courses as UL even though ACE does not, so you're not going to have a lot of luck at EC getting those as UL. You'll need to find the UL courses somewhere else instead.
