It looks like to get the benefits you need to take 12 credits at EC.

It is a very good program for those wanting to go for an EC degree.
But yes, you're correct; you need 12 credits at EC for the degree to work.
Basically all partnership programs I've seen such as the Sophia and EC partnership, required 12 credits from EC.
The main thing is, Sophia only has one course that I want but not necessarily need (Project Management).

To get the full benefits, you would have to take 12 hours. However, you still get some of the benefits even if you take fewer than 12 hours.
ETA: Actually, it's a better deal if you don't take the 12 hours, as long as you get the partner benefit.

these two courses can satisfy Excelsior's Written English Requirement ?

Unfortunately, I think those two courses count as "/or Humanities." But it wouldn't hurt to check with your advisor.
