Applying for internships / jobs while doing Sophia courses

Hello everyone, 

I would like to start doing my sophia courses but while doing them I would like to work and apply for internships / jobs. I intend to do my degree at UMPI. Many internships or jobs require you to be enrolled in a university but by doing sophia courses you arent officially enrolled in a university, correct? How do I go about this when applying. Do I register with UMPI in advance and then write it on my resume? 

I dont really know how to go about this so any advice from people with more experience is appreciated

No, Sophia does not count as being enrolled at a University. And I'm guessing just being enrolled is not enough - you have to be a current student, which means taking courses.

I would probably just get a regular job now, and wait to get internships until you're actually going to enroll somewhere and take courses.

You need some relevant courses under your belt before trying to apply for internships. Your advisor might be able to help you determine when and where to apply for internships.
