I also had the one lonely credit requirement for EC and because of great advise here from previous posts, I was sent to free classes at National Fire Association, who is part of the National Emergency Training Center. I chose to do the "Self-Study Course for Community Safety Educators".
Got the 1 credit transcripted through ACE for $45, and it is on my EC transcript.
I did have to call ACE to go through there process. I tried to do it online repeatedly, to request the transcript once I had completed the course, and had a little bit of problem navigating the site. It was not so clear. Then called their toll free number and their staff was quite helpful and walked me through the process. It was simple but not clear. It looked like I was being sent in circles but, if I had gone further down to the bottom of the page, there was a submit button that was about 6 inches below the last bit of typing, so I did not see it. Just keep looking and you will find it.
For more information, do a search on "NFA" and you will see a lot of discussion on this. You can go to ACE first to see which courses they approve, then pick the one that interests you. When I was first investigating this, there were 3 that were able to be transcripted through ACE.
This is the list I kept from back then, but make sure they are still accepted before doing the work.
