Do you really want/need to take classes? Are you interested in credit-by-exam?

Either way, look through the Student Guide to Credit by Exam. It will give you examples for many of the requirements. Of course, the Liberal Arts catalog will help, too.

Arts & Sciences means anything within Humanities, Social Science, History, Natural Science, or Math. Applied Professional is basically a free electives section.

Which subjects interest you for 2 depths?
AS in 2010 and BS in 2013 at Excelsior College - Transcripts and Costs
MS Biostatistics in 2019 at Texas A&M University - Graduate School
