According to the Notre Dame student newspaper in 2011, http://ndsmcobserver.com/2011/10/univers...-on-paper/ there were 5 schools using animal skins. Notre Dame stopped the practice, which leaves at most 4 remaining schools.

Notre Dame will sell a replacement sheepskin diploma to those who graduated in August 2011 or earlier. http://registrar.nd.edu/alumni/newdiploma.php

Wabash College handed out sheepskin diplomas in May 2015. http://www.wabash.edu/alumni/docs/Class_...Letter.pdf

William & Mary mentioned sheepskin diplomas as late as 2013 but I could not determine current practice.
