I could have taken Sophia courses this whole time while I've been bored out of my mind working from home. I'll take your advice on Greek Philosophers first too, philosophy really interests me. I'm a super nerd.
You might as well take Intro to IT from Sophia as well if you don't already have a CIS-107 equivalent. If it turns out that you have to switch to Computer Science instead of Cybersecurity after all, it'll be good to have taken that one. If you have even a halfway decent familiarity with computers, Sophia's Intro to IT should be pretty easy to pass.
ASU has Programming for Everyone: Introduction to Programming starting on August 18th that comes into TESU as COS 111. I don't know if this would replace ITS-150: Computer Programming I, but it's worth checking out. At the very least, it costs nothing to sign up for the class right now. So, if it turns out it doesn't fit into your degree plan, you can drop it and not be out of pocket any money.
