Yes - as long as you get your 18cr of UL in the AOS, they don't care which ones are UL and which are LL.

I wanted to do the English at TESU but I coudn't find two of the courses and couldn't really afford to stretch to paying for three TESU courses (2 English + capstone)
I used Shmoop to fill out most of the AOS to complete a BALS Humanities instead.

Regarding the non-western literature course, does that have to be UL or can it just be LL? Are there any specific requirements that specific English courses be taken at the UL or is there a lot of freedom and I just need 12 credits in UL English of anything I like?

You need 18cr of UL in the AOS (Area of Study - Major), 3cr of which will come from the capstone.
It doesn't matter which courses are UL, and long as there are 5 of them.
