I have a slot scheduled for Friday so I need to know which one I can get through quicker (study time)

If it were me, I'd take Environment and Humanity first. I thought it was a bit easier, plus you probably already know a bit about erosion and the ozone layer just from watching tv and such. Anthropology was harder because of all the archaeology and such questions. But that is just my opinion.
(Edited to add-Well, nevermind! I haven't taken Astronomy, so I have no opinion.)

Depends a lot on how much of each subject you already know about, of course, but having taken them both, I would say that Environment & Humanity is the easier of the two if you already have a basis in either earth science or biology. Personally, I've found all of the natural science tests to be easier than the social science tests because with nat sci, there's a lot less room for the test creators to create questions that are subjective - with nat sci, it's pure facts, not various opinions, that the test creators have to deal with. Anyway, back to the Enviro Sci ... grab a copy of the Princeton Review AP Environmental Science study guide, and in a few days you'll have all of the info that's on the Environment & Humanity test down cold.
