Literature credits are the only thing holding me back, so i'm paying for InstantCert to help me study for either of the test. My question is, someone with no Literature experience which test might be easier to pass and study for? Either test will give me the credits needed. Thanks!

Personally I'd say English Literature. Looking at what is on both, not sure about you but some of the books from English Lit I did in HS. I did only 1 book from American Lit in HS. American Lit is just a tad bit lower in difficulty on Free-Clep-Prep.com so you should go with whichever one you may have an easier time picking up.
