Welcome! The best way is to purchase an instantcert membership so you can use their exam specific feedback and flashcards. As for the easiest exams, that is very subjective. If you do a search of this forum you will see several threads dedicated to this question. The specific exam feedback area will also give you great advice on what to expect from these exams. Good luck!

I would say THE easiest test for most people is the Analyzing & Interpreting Lit CLEP. I haven't taken Intro to Sociology yet, but most people say it's fairly easy for them. If you're good at English, English Comp or Freshman Comp are easy.

The English Lit/Am Lit/Humanities trio was the most fun for me to study for (and 18 credits!!!)

If you're good at math, College Math should be a breeze (considering I'm bad at math, but was totally fine with it)

Good luck!!

Exactly how many credits do you need? I mirror other suggestions that you search the forum as this question has been asked and answered many times.
