I know that any credits I transfer into TESU will not have a grade associated with them. However, if I take one class with them and get a real grade on it, will that one class essentially be my GPA? Or is there a minimum threshold of graded credits needed to determine a GPA?

Yes, but that "GPA" won't be useful for anything.

One class will give you your GPA, there is no minimum that you need to take. When I'm finished there, I won't have a GPA at all (my only credits from TESU will be TECEP's).

Actually, the cornerstone class will not give you a GPA with TESU.

Are there any downsides to not having a GPA? Aside from acceptance into a graduate program, what other use does a GPA have? Bragging rights excluded.

I have seen some jobs (NJ teaching certification for one) that have said something like BA with minimum 2.5 GPA my TESC transcript list all of my credits, where they came from and grade if given, it then list my GPA just from TESC courses. Since it does not mention any other GPA I have found that most don't look any further. When I applied to WGU they did calculate GPA based on ALL graded credits.
