If grad school has a prerequisite of Microeconomics and Statistics and I have those on my ACE transcript what would be the best way of making sure those courses are accepted?

Ask the schools before you apply. The school either will or won't, there's nothing you can do that will make them do so.

When I spoke with someone at ENMU about the MBA program, they had 9 core courses that were required before you could start. She said that if I didn't already have them, that I could test out of them for free through their school. It sounded somewhat like a course they had to help you pass the tests, although I'm not certain that was the case.
Anyway, they may have some options for you, so be sure to check first before giving up.
Also, Stats is a DSST exam, and Microecon is a CLEP, which are both more widely accepted than other ACE courses. And of course, both are TECEP exams, which might be accepted as well.

Since you're already enrolled, sending them to appear on your degree transcript will be an easy solution. I had a similar issue, I took the statistics DSST after I graduated from TESU. So, I had credit (not a grade) but in the case of asking for pre-req, I sent my DSST transcript to both, and neither said anything- I still earned admission. That might not always be the case, but if I were doing it over, I would have that DSST credit on my TESU transcript to keep things simple.

I think that's the best solution, have them transcribed and hopefully it works for them.
