I need to take either organizational behavior, or human resource management. Any insight as to which one might yield better results?

IMO, they are equal. I think those are both DSSTs, if I remember correctly. I took them back to back and didn't sweat either one. They are actually very similar in content.

I'd go with HRM. I think it's a bit more common sense stuff, but it's really a toss up.
